Saturday, May 30th, one in the morning, one in the afternoon (three hours), $20 Saturna Rec Centre

David Rotsztain, a Mayne Island farmer and cheesemaker, will be leading a hands-on cheesemaking workshop on Saturna. Learn how to make chevre, paneer, blue cheese, cheese curds, yogourt and kefir, and take your fresh cheese home with you!  David will also discuss the history, science and practice of cheesemaking, the politics of raw milk, rennet free cheese and dairy ferments.

David Rotsztain is a cheese educator residing on Mayne Island. He has given cheesemaking workshops for many food security-minded organizations around the Salish Sea including the Galiano Food Program, the UBC Farm, and the Vancouver Sustainable Living Arts School.  David is working to get a goat dairy started up on Mayne this summer.
