David Rotsztain, a Mayne Island farmer and cheesemaker, will be leading a hands-on cheesemaking workshop on Saturna. David will also discuss the history, science and practice of cheesemaking, the politics of raw milk, rennet free cheese and dairy ferments.
David Rotsztain is a cheese educator residing on Mayne Island. He has given cheesemaking workshops for many food security-minded organizations around the Salish Sea including the Galiano Food Program, the UBC Farm, and the Vancouver Sustainable Living Arts School.
