Cheesemaking 101: cost ($25) 10 a.m. - 1 p.m.
Learn how to make fromage frais, paneer, blue cheese, cheese curds, yogourt and kefir. David will lead participants through the various stages of the cheesemaking process from culturing to l'affinage (ageing). The workshop will emphasize a sort of 'natural cheesemaking', with a focus on simple, hands-on techniques that can be easily reproduced at home. David will also discuss the history, science and practice of cheesemaking, the politics of raw milk, rennet free cheeses and dairy ferments. Oh, and there will be lots of cheese to eat too.
What to bring:
- cheese friendly snacks (and drinks if you like)
- a container to take your cheeses home in
Cheesemaking Part Two: cost $25 2:30 p.m. - 5:30 p.m.

- see how swiss and french style hard cheeses are made.
- be enlightened about goats milk, goats milk cheeses, and the making of the most delicious chevre and the making of blue cheese

David Asher Rotsztain is an organic farmer and farmstead cheesemaker on Mayne Island on the west coast of BC, where he makes chevre, as well as aged goats milk cheeses from a small herd of Saanen goats. He picked up his cheesemaking skills from various teachers, including a Brown Swiss cow named Sundae on Cortes Island. David leads cheesemaking workshops for many food-security-minded organizations around the Salish Sea and abroad. Since his last visit to Saturna, he has conducted workshops at Lifecycles in Victoria, the UBC farm, LUSH Food Action Society in Courtenay, the Powell River Food Security Project, Linnaea Farm on Cortes, the Galiano Food Program, Santropol Roulant in Montreal and The Stop Community Food Centre in Toronto.
