Pastry and dessert with Jason Malloff

Pastry and Dessert Cooking Class (4 - 5 hours)
$65

Jason Malloff, the Saturna Island Vineyard Bistro's chef is offering a cooking class in pastry techniques and dessert composition. (I suggest reading the bottom paragraph below, first.)

Two-layered Lemon Tart
The two desserts covered in the class will be: Two layered Lemon Tart with candied lemon slice and lavender-lemon syrup and Maple-Goats cheese cake with red wine poached pears and chantarelle mushrooms (strange but true). Each of these desserts are comprised of multiple elements which may be used in other combonations to make further desserts. As well they each demonstrate the importance of taste, texture, perception and memory in dessert composition.

Demonstrations of alternate uses of dessert compnents and secondary products will also be preformed. Students will be provided with printed theory and recipes for the course.

Also students will be sampling what is prepared and should bring a container from home in case they are unable to eat multiple desserts in an afternoon.
